I didn’t know the man, never met him, but he was a kind of hero. In “Kitchen Confidential” and other works, he was brutally honest, both about his occupation and his own part in it. More generally, he felt it was important to de-colonize our tastebuds, to understand and appreciate local taste, to try anything, to enjoy most. Television was a marvelous medium for him, with his outgoing style and intimate explanation.
Recently he has been front and centre in the #MeToo movement and was always a supporter of immigrants willing to work their way up through the industry. He was loud and brash and I shall miss him.
