Ice Cream Instead of A Soaking

Being the first of the month, I would usually have been walking the Drive in preparation for the next Changes on The Drive report.  However, it is pouring down with rain, and tomorrow is supposed to be fine, so that can wait for a day.

Instead, I made coconut ice cream without a machine — and it was really good!  I used the method suggested by the Crazy Russian Hacker …

I used 1 cup of milk, 1/2 cup coconut milk, and 1/2 cup half-and-half.  I only used 1 tablespoon of sugar and no vanilla extract.  I found I had to shake it for 10 minutes to get the consistency I wanted.

The taste was just delicious, and I can see how you could successfully add almost any flavouring to the mix.  Quick and easy, this is good stuff!
